Christmas Chocolate Fruit & Nut Clusters

This no-bake chocolate bite is a balanced snack designed to support steady blood sugar levels while satisfying sweet cravings. Dark chocolate provides polyphenols that support cardiovascular and brain health, while nuts and seeds contribute healthy fats, magnesium, and fibre to promote satiety and hormone balance. Oats offer slow-release carbohydrates for sustained energy, and cranberries add a touch of natural sweetness alongside antioxidant support. Using xylitol helps reduce the glycaemic impact, making these bites suitable as a low GL snack option.

Ingredients


  • 100g dark chocolate (e.g. Green & Blacks or other good quality chocolate)

  • 15g dried cranberries

  • 40g pecan nuts

  • 5 Nairn’s rough oatcakes

  • 2 tsp xylitol

  • 40g flaked almonds

Method


  1. Melt the dark chocolate in a heatproof glass bowl set over a saucepan of gently simmering water, stirring until smooth.

  2. Place the cranberries, pecan nuts, oatcakes and xylitol into a blender and pulse until roughly chopped, keeping some texture.

  3. Add the chopped mixture and flaked almonds to the melted chocolate and stir well to fully coat.

  4. Spoon the mixture into 10–12 standard cake cases for a 5 GL snack, or 20 petit four cases for a 2.5 GL snack.

  5. Chill in the fridge for at least 30 minutes, or until fully set.
