Lemon & Thyme Baked Salmon with Greens and Brown Rice

This recipe provides high-quality protein and omega-3 fatty acids from salmon, supporting brain health, hormone balance, and inflammation regulation. The combination of leafy greens and brown rice offers fibre, magnesium, and B vitamins, which help support digestion, blood sugar balance, and energy production. Lemon and herbs further support liver detoxification and digestive enzyme activity.

Serves: 2
Ingredients
2 tbsp extra virgin olive oil
Zest and juice of 1 lemon
2 garlic cloves, minced
1 tsp dried thyme
½ tsp sea salt
½ tsp black pepper
2 salmon fillets
120g brown rice (uncooked)
240ml water
150g tenderstem broccoli
2 handfuls spinach
Method
Preheat the oven to 190°C (fan).
Combine olive oil, lemon zest and juice, garlic, thyme, sea salt and black pepper in a small bowl.
Place the salmon fillets on a lined baking tray and spoon the marinade evenly over the top.
Bake for 12–15 minutes, until the salmon is cooked through and flakes easily.
Meanwhile, add brown rice and water to a saucepan. Bring to the boil, then reduce to a simmer and cook for 25–30 minutes, or until tender. Drain if needed.
Steam the broccoli for 4–5 minutes until just tender, then stir through the spinach until wilted.
Serve the salmon alongside the rice and greens, spooning any remaining juices from the tray over the fish.
