Chilled Cucumber & Avocado Soup

When it’s too hot to cook, this creamy soup cools you down and nourishes your skin. Cucumbers are packed with silica for skin health and hydration, while avocado delivers fibre and heart-healthy monounsaturated fats.

Serves: 2
Ingredients
1 large cucumber, peeled and chopped
1 avocado
Juice of 1 lime
Handful fresh coriander
1 cup chilled vegetable stock or water
Salt & pepper
Method
Blend all ingredients until smooth.
Chill for 30 minutes.
Serve with a drizzle of olive oil and a sprinkle of pumpkin seeds if you like.
