Raspberry & Almond Butter Overnight Oats

No cooking, no fuss. Just 5 minutes of prep the night before and a genuinely delicious breakfast waiting for you in the morning. Creamy, naturally sweet, and packed with fibre, protein, and gut-loving ingredients. This is the recipe that will finally make you a morning person.



Serves: 2


Ingredients


  • 100 grams rolled oats

  • 200 milliliters kefir (or natural yoghurt)

  • 100 milliliters oat milk (or milk of choice)

  • 2 tablespoons chia seeds

  • 2 tablespoons almond butter

  • 150 grams fresh or frozen raspberries

  • 1 teaspoon honey or maple syrup

  • 1/2 teaspoon vanilla extract

  • 2 tablespoons flaked almonds, to serve

  • 1 pinch pinch of sea salt

Method


  1. Combine the rolled oats, kefir, oat milk, chia seeds, honey, vanilla extract, and a pinch of sea salt in a bowl or jar and stir well. The chia seeds will thicken everything up overnight so don't be alarmed if it looks too liquid at this stage.

  2. Cover and refrigerate overnight, or for at least 4 hours.

  3. In the morning, add the raspberries to a small saucepan over low heat and cook for 3–4 minutes, stirring, until they break down into a loose jammy compote. Or if you can't be bothered, just use them straight from the fridge.

  4. Give the oats a good stir and divide between two bowls or jars. Swirl the almond butter through the top, spoon over the raspberry compote, and scatter with flaked almonds. Eat immediately or keep in the fridge for up to 2 days.

Kefir is one of the most potent fermented foods you can eat - it contains up to 60 strains of beneficial bacteria and has been shown to improve gut diversity more effectively than standard yoghurt.


Oats are a brilliant prebiotic, feeding the good bacteria already in your gut.


Chia seeds provide omega-3 fatty acids and soluble fibre that slows glucose absorption, keeping your blood sugar stable all morning.


Almond butter adds healthy fats and magnesium - essential for stress regulation and sleep.
