Vegetable Patties

Variety is the spice of life! These vegetable patties are a delicious and easy way of including a greater variety of rainbow coloured vegetables, which are high in vitamins, minerals and antioxidants, into your diet. Research suggests that heart-healthy HDL cholesterol protects against heart disease and stroke. The best way to raise your HDL level is to make fruits and vegetables the largest part of your diet.


  • 1 cup of grated carrots

  • 1 cup of grated courgettes

  • 1 cup of grated sweet potato

  • 1/2 cup of finely chopped red peppers

  • 1/2 cup of finely chopped kale

  • 1/2 cup of finely chopped leeks

  • 1/2 cup of finely chopped red onion

  • 4 eggs

  • 1 tsp Himalayan salt

  • 1/4 tsp ground black pepper

  • 3 tsp coconut oil


  1. Place all ingredients into a mixing bowl

  2. Lightly beat the 4 eggs, then add to the vegetables and mix together

  3. Add the salt and pepper

  4. Shape into patties of whatever size you prefer

  5. Heat the coconut oil in a frying pan

  6. Fry the patties on a low heat for approximately 5 minutes on each side
